INGREDIENTS:
Beef chuck roast
Russian dressing (I used 1/2-1 cup)
Beef broth (I used bone broth)
Onion (sliced)
3 cloves of garlic
Sweet baby ray’s bbq sauce
Slider buns (I used Hawaaian sweet roll buns)
3 cups Coleslaw (bagged)
1/4 cup Fat free Fage yogurt
Juice of 1 lime
Cilantro
Green onions
Dill pickles
Sour cream and onion chips
DIRECTIONS:
Place beef roast, russian dressing, onion, garlic, and beef broth in slow cooker and cook on low for 6 hours. Prepare coleslaw: Combine slaw, yogurt, lime juice, cilantro, green onions, and salt and mix until fully coated. Once roast is fully cooked, drain the juice out and pour some Sweet Baby Ray’s bbq sauce over the top (if you will be counting macros you may want to add the Baby Ray’s after you plate the beef on your slider.) Serve meat on slider buns with coleslaw, dill pickles and sour cream and onion chips!
Macros for 1 slider bun with 2 oz meat, 2 tbsp bbq sauce, scoop of slaw, 5 pickles, and 9 chips: 44c/10f/27p
