Taco Mac Revised! (with rice and beans)

This version of Taco Mac was sent to me by a friend on Insta, and she subbed the pasta for rice, and added black beans!

Ingredients:

1 1/3 cup rice (measured dry)

1 lb 90% lean ground beef(you could even use ground turkey to lower the fat content!)

1/4 cup diced onion

1 tbsp minced garlic

1 cup salsa(I used mild Picante)

15 oz can of black beans

1 packet Cheesy taco seasoning

8 oz 1/3 fat cream cheese

1/2 cup shredded Monterey Jack, 1/2 cup sharp cheddar (combine them after shredding) **you could also buy the pre-shredded cheese but that shit grosses me out to be honest)

1.5 cups Mexicorn

Directions:

  1. Preheat oven to 375. Spray a 9×13 baking dish with cooking spray.
  2. Cook your rice and set aside.
  3. Cook your meat and then drain the fat. Add onions and garlic and cook until the onions are translucent. Add the taco seasoning and salsa and mix!
  4. Combine ground beef mixture with rice in a large bowl. Add the Mexicorn, black beans, cream cheese and 1/2 cup of the cheese. Mix until cheese is fully melted and pour into baking dish.
  5. Add the remaining 1/2 cup of cheese to the top and bake for 15 min.
  6. Optional toppings: black olives, cilantro, light sour cream, lettuce, scallions.
