Pumpkin Protein Muffins

Ingredients:

1 ¾ cup GF oats

1 tsp baking soda, 2 tsp baking powder, ¼ tsp salt, 1 ½ tsp cinnamon, ½ tsp pumpkin pie spice, ½ cup swerve(or sugar baking sub)

¼ cup vanilla flavored protein powder(heaping scoop)

1 cup canned pumpkin

½ cup unsweetened applesauce

½ cup fat free fage

6 tbsp liquid egg whites

Optional add-ins for family: chocolate chips, pecans, almonds, walnuts, raisins

Directions:

Preheat oven to 350. Line 12 muffin tins with liners or spray with nonstick spray. Blend oats until smooth, then add other dry ingredients. Add all other ingredients to mixer and blend well, except for add-ins. Divide mixture among muffin tins, place in oven. Bake for 15-20 minutes, or until tops are lightly golden brown. Batter is super moist, toothpick may not come out clean. Cool the muffins before removing pan.
