Mary’s Shrimp Scampi and Zoodles

Ingredients:

16oz peeled, deveined, uncooked shrimp

Minced garlic or garlic gloves – to taste

1/2 lemon juice

1 -2 Cups of Zucchini spiraled into “zoodles”

2 TBSP olive oil

3-4 TBSP Julienne cut sundried tomatoes in olive oil Red Pepper Flakes, to taste

TOP: shredded parmesan cheese (not included in macros)

Optional: artichoke hearts

1. Sautee shrimp in separate pan

2. Add olive oil, sun dried tomatoes, onions and garlic and sautee until translucent 3. Once shrimp is pink start cooking zoodles.

4. Add lemon juice, red pepper, and remaining olive oil to pan. Combine shrimp with sauce.

5. Dish zoodles and top with shrimp
