TALK ABOUT EASY! You could make this for the family, and then have 1/2 cup portion for yourself for dinner! Make sure you have more chicken than rice though!
1 bag Uncle Ben’s brown rice (microwaveable bag)
1/2 bag of pre-cooked grilled chicken strips
1/2 bag of frozen peas
2 eggs scrambled
Toss with 1 tsp butter, some soy sauce and if you like heat – sriracha!
