Lindsay Burk’s Gumbo

Ingredients:

1 package of Eckrich Polish Sausage (cut into quarters or small pieces)

1 package of small, deveined, tail off, peeled Shrimp

1 cup of chopped carrots

1 cup of chopped celery

1/2 cup of chopped onion

1 can of tomato sauce

1 can of diced tomatoes

1 box of Zatarains Rice (Jambalaya or Gumbo flavor)

1 can of Beef Broth (I use low sodium)

I throw everything but the rice in the crockpot and let cook for a few hours. Then I will cook the rice until it’s almost completely soft and then dump the rice (and water) into the crockpot mixture and let cook a few more hours.
