1 rotisserie chicken shredded
1 can red enchilada sauce (siete is a great gluten free option)
4 oz cream cheese 1/3 less
2 cans fire roasted tomatoes diced
1 can corn
1 small can diced green chili
1 bell pepper diced and sautéed
1 onion diced and sautéed
1 tablespoons garlic minced and sautéed
Cumin and salt and pepper to taste
Directions
Sautéed the bell pepper onion and garlic
Then add all canned ingredients
Add cream cheese and chicken
Let it simmer on low until all the cream cheese is melted and ingredients warmed through
