Ingredients:
2 cups shredded chicken
2 cans fire roasted tomatoes drained
1 small can diced green chili’s
Small can corn drained
1 white or yellow onion chopped
1 bunch of cilantro chopped
2 tsp minced garlic
1 package taco seasoning – I use the cheesy taco seasoning
1/2 tablespoon cumin
1/2 tablespoon chili powder
2 teaspoons paprika
2 teaspoons brown sugar
1 tsp back pepper
1 container low sodium chicken broth or bone broth
*You can use left over grilled chicken or shredded crockpot chicken!
Directions:
In a pan sauté the onion and garlic until they start to become translucent. Add all of the seasonings and the cilantro, and sauté for about a minute. The mixture will become a mess but trust me it will dissolve beautifully with the liquids & the sauté process is what gives the soup it’s flavor!!! Add the chicken, tomatoes, green chilis, corn and the seasoning mixture to crock pot then pour chicken broth over the top and then stir. Cook on high for at least 4 hours or low for 6-8
To get my macros more precise I get a 1/2 cup and scoop out just the meat & tomatoes then I add the broth to fill up my bowl. Before you serve squeeze a lime over it it’s awesome!
White Rice – just a couple tablespoons will add some extra heartiness to this soup
Avocado, tortilla strips, sour cream, and cheese are all options to add if you have macros leftover!
