This is one of those “stand over the baking pan and eat until you can’t see straight” recipes. It is RIDICULOUSLY good! But it’s also a great family dinner that everyone will love, and you can enjoy as well!
Ingredients:
10 oz macaroni noodles
1 lb 90% lean ground beef (you could even use ground turkey to lower the fat content!)
1/4 cup diced onion
1 tbsp minced garlic
1 cup salsa (I used mild Picante)
1 packet cheesy taco seasoning
8 oz 1/3 fat cream cheese
1/2 cup shredded Monterey Jack, 1/2 cup sharp cheddar (combine them after shredding) **you could also buy the pre-shredded cheese but that shit grosses me out to be honest)
1.5 cups Mexicorn
Directions:
- Preheat oven to 375. Spray a 9×13 baking dish with cooking spray.
- Cook your macaroni and set aside.
- Cook your meat and then drain the fat. Add onions and garlic and cook until the onions are translucent. Add the taco seasoning and salsa and mix!
- Combine ground beef mixture with the pasta in a large bowl. Add the cream cheese, Mexicorn, and 1/2 cup of the cheese. Mix until cheese is fully melted and pour into baking dish.
- Add the remaining 1/2 cup of cheese to the top and bake for 15 min.
- Optional toppings: black olives, cilantro, light sour cream, lettuce, scallions.
Macros for 4 oz serving with no toppings: 20c/7/10p
Macros for 8 oz serving with no toppings: 40c/14f/20p
*You could save up some of your carbs during the daytime, and have yourself a large 8 oz serving of this and meet your macros perfectly!
