Caroline’s Huevos Rancheros

This recipe is approved for everyone to replace ANY meal! It is also a great vegetarian dish!

Ingredients:

1 egg, 1/2 cup Rotel, Garlic, 2 tbsp Fat Free Fage, 1/4 cup red or orange pepper, 1/4 cup onion, 1/3 cup Fat Free refried beans

Optional toppings: lettuce and/or cilantro

Directions:

Spray skillet with cooking spray and heat to medium. Add onions and peppers and saute until soft. Add in however much garlic you like. Saute for a minute or so. Add the refried beans and the Rotel and cook for a few minutes. Make a well in the beans mixture and add the egg, cook until your liking. Leave in skillet for serving and top with cilantro, lettuce, fat free fage and enjoy!
