Okay ladies, this recipe is my new favorite! It just moved Taco Mac to the second position. You can also double or triple the batch and freeze some for later, they are super easy to reheat!
INGREDIENTS:
6-8 oz light cream cheese
1/2 cup green salsa
2 tbsp fresh lime juice
1-2 tsp seasoned salt, 1 tsp onion powder, 1/2 tsp garlic powder
Chopped cilantro and green onions (use however much you like, I always use a lot of both!)
Rotisserie chicken, shredded
2 cups grated pepper jack cheese
Flour and/or corn tortillas (I prefer corn, my fam likes flour)
Kosher salt, cooking spray
DIRECTIONS:
- Preheat the oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.
- Heat cream cheese in the microwave for 30 sec so it is soft and easy to stir. Add green salsa, lime juice, seasoned salt, onion powder, and garlic powder and mix well. Add cilantro, green onions, chicken, and pepper jack cheese and combine well.
- You can prepare up to this step ahead of time. Just keep the mixture in the fridge and try not to dip 10,000 chips in it!
- The corn tortillas are harder to roll without cracking. I place a wet paper towel on a plate, place two corn tortillas in between and then place another wet paper towel on top of them, and microwave for 45 seconds. They turn out perfect and are super easy to roll this way!
- Place a few tbsp of chicken mixture on the lower third of the tortilla, keeping it about 1/2 inch from the edges.
- Roll it up as tight as you can.
- Place seam side down on baking sheet. Make sure they are not touching each other and spray them with cooking spray and sprinkle with kosher salt.
- Place pan in oven and bake for 15-20 min or until crisp and the ends begin to turn golden brown.
- Dip in salsa, sour cream, guacamole, or serve with rice!
The “Caroline” way:
I like the corn tortillas served with queso blanco on the top, with some sour cream!
