*You can buy zucchini noodles at Reasors, Sprouts and Whole Foods, but I make my own with a $20 spiralizer from Amazon!
INGREDIENTS:
- 1 lemon juiced
- 1/2 tablespoon minced garlic
- 3 Roma tomatoes diced and seeded OR 1 can of petite tomatoes drained (you can even get the Italian seasoned ones)
- 1/2 large white onion finely diced
- Salt and pepper to taste
- (Fresh basil if you want but not necessary)
- 2 packages of zuchinni noodles or 4 small zuchinnis spiralized. It will look like a very large amount but it cooks down a lot.
You will want a large frying pan or a wok for this, if you make a full batch!
DIRECTIONS:
- Sauté the onion and garlic in a pan – I use spray avocado oil
- Add the zucchini noodles and tomatoes
- Using tongs, sauté the noodles for a couple minutes. They cook fast! You want them al dente, not soggy!
- Add lemon juice and season with salt and pepper.
- Serve with shrimp or chicken based on your appropriate portion
1 medium zuchinni is 6c/2p/0f. 1/2 of a bowl of noodles is pretty close to the medium zucchini so I use that for tracking!
