INGREDIENTS:
3 cups shredded hashbrowns
1 1/4 cup chopped hamGreen onions, chopped
1 1/2 cups shredded cheddar cheese
1 can low-fat evaporated milk
4 eggs, scrambled
4 egg whites
DIRECTIONS:
Spread potatoes on the bottom of 9×13 pan.Season with salt and pepper. Layer with chopped ham, green onions, and cheddar cheese. Mix eggs, egg whites, and evaporated milk. Pour over the hashbrowns, ham, cheese, and green onions. You can refrigerate overnight and bake in the am also. If doing this, you will bake uncovered at 375 degrees for 55 minutes.
If baking right away, bake uncovered at 350 degrees for 40 minutes. For a smaller pan, cut ingredients in half.
